Tasting Notes: Dry fuller-bodied sparkling pét-nat with tropical notes the finish like lychee. Crisp, notes of pear and apple, a touch of brioche with a textural mouth feel. Reminiscent of champagne.

Background: Regeneration has been our focus since we became stewards of our land in 2018. The wild state of a vineyard untouched for some time taught us about its tremendous biodiversity. Biodynamic principles inspire our view of our whole farm as an organism; we listen and learn from the weeds and pests, and endeavor to create a vibrant ecosystem. We believe this holistic approach is key to crafting fresh, balanced, and thought-provoking cold-climate wine.
